Internal transfer of meat within a facility to reduce handling and intermediate packaging usage and multiple handlings.

  1. External transfer of primals and/or manufacturing meat between primary processing plant (i.e. slaughter boning) and secondary processing (i.e. retail packing)
  2. Short term buffering (1 – 7 day storage) to enable secondary processing from inventory rather than from primary processing (carcass breakdown), this enable improved alignment of product, equipment and labour, reducing product bottlenecks and suboptimal cutting decisions.
  3. Medium term maturation (14 – 35 day aging to improve product quality).
  4. Export of primals and manufacturing meat across borders.
  5. Network rationalisation, improving access to labour and the liberation of duplicated equipment /capital in satellite plants, (i.e. minimal processing taking place at the point of slaughter boning) – transferring larger meat cuts from the satellite to a larger more sophisticated plant located near a larger market/labour pool.
